For the Love of Regaining My Passions


I don’t do Valentine’s Day and I’m not a big fan of the month of February. I love it when intuition brings creative ideas when you least expect it. I was sitting on the couch minding my own business and this extravagant food menu came to mind. I love food, my stomach started growling, the images of the food came to mind, and my mouth started to water! The mind is a lovely odd thing you know. Well I went to wegmans and totally forgot the madness of grocery stores on Valentine’s Day. I got 2 prime mignon, chocolate chips, veggies, fruit, and hauled tail out of the Mayhem!

For tonight’s dinner

  1. Appetizer: Cesar salad
  2. Main Course: Steeple chocolate herb mignon
  3. Dessert: Lava Cake

My first time ever cooking a filet mignon, making the sauce, and bake a lava cake. Remember this all popped into my mind 🙂 so I immediately grab my Calphalon saucepan-salt & peppered the filets, add olive oil and let them sit to the side until 8pm (our dinner time). I prepare the herb butter: cilantro, parsley, lemon zest, garlic rolled into a saran wrapped log and into the freezer. Asparagus & spinach simple to prepare.

 

For dessert: I used pinterest THANK GOODNESS!! Taking my muffing sheet-lined w/butter & cocoa powder. Then making the batter, pouring it into the muffin cups, and into the fridge to chill for later.

 

Yes, finally 8pm arrives, I melted some more chocolate and let stand to the side. My addiction is the food network/travel channel. Thanks to remembering watching pan seared filets 🙂 exactly what I did-pan seared on all sides to get a beautiful char and into to a 400 degree oven for 25mins. For the sauce I grabbed the melted chocolate and pour some of our favorite steeple chase semi-sweet red wine into the mix. Kept tasting and I like my proportions. Not sure how much I poured but it works!! Veggies are cooking, done, I took the meat from the oven, and allow to rest. Poured a bit of the wine chocolate sauce onto the meat, flipped them over, and continued to rest.

 

Now for the fun part: decorating the plates :)) a bit of sauce, veggies, meat in the center, and herb butter on top!! Done

 

Dessert put the sheet into a 450 degree oven for 10min. Take out of the oven and let stand for 5min. Preparing to flip I was so nervous, I put a flat baking sheet on top, flipped, and well what didn’t break was kept 🙂 decorated my boyfriends plate: I wrote”love you”, cake in the middle, powdered sugar, gelato vanilla ice cream on top. PERRRFECT!!
