Stuffed Tomatoes Cups w/cheese & basil, bacon


Similar to the Stuffed Zucchini Boat Recipe will be doing the same technique 🙂 and using the same ingredients.

 

Ingredients (if you want more double ingredients)
4 – Small tomato
3 – Slices of bacon
1 tbls – Sour cream
2- Basil leaves
-Shredded cheese, salt & pepper
-Baking sheet & bowl

Directions
1) Wash, dry, tomatoes and cut them in half. Take your spoon and scoop out some of the tomato insides and put the innards in a bowl. Grab your baking sheet lined w/aluminum foil and place tomato cups on it. Chop up basil and bacon.

2) In a separate bowl add bacon, basil, tomato, sprinkle cheese, 1 table spoon of sour cream, and salt & pepper to taste. This is your filling now.

3) Lets get to the tomatoes on the baking sheet. Season them w/salt & pepper.

4) Scoop filling into tomatoes, top with more cheese, and bake on 400 degrees for 15-20 minutes. It’s okay if your tomatoes topple over 🙂 mine did
