Stuffed Zucchini boats w/bacon

Ok I’m still on my “Taste New Veggies I Say I Don’t Like” theme. Zucchini is one that I’ve never truly been introduced to. I’ve only had it in chinese food or stir fry and scooted it to the side of my plate. Tonight for dinner in trying it again but with BACON!!


Things taste great w/bacon & cheese sooo lets go!


Ingredients (if you want more double ingredients)
1 – Zucchini
1/2 – Small tomato
3 – Slices of bacon
1 tbls – Sour cream
-Shredded cheese, salt & pepper, drop of butter
-Baking sheet & bowl



1) Cook bacon and chop into small pieces to go along w/rest of your filling. Grab your baking dish, lay a sheet of aluminum foil, and sprinkle Pam cooking spray or a bit of olive oil. Wash, dry, your Zucchini before you scoop out the innards. Chop zuccini innards, tomato in small pieces, and this will become the filling. Place zucchini on your baking sheet, season w/salt & pepper, and a bit of butter.


2) Combine your chopped filling (bacon, zucchini, tomato, cheese) together in a bowl, add 1 table spoon of sour cream, sprinkle your cheese, and salt/pepper to taste.


3) Scoop filling into each zucchini halve and bake at 400 degrees for 15-20 minutes.
